For 1 person
Ingredients for the recipe
| Ingredient | Quantity |
|---|---|
| Gluten-free oat flour | 120 g |
| Organic eggs | 1 pc |
| Semi-skimmed milk or oat drink | 120 ml |
| Baking powder | 1 tbsp |
| Date paste | 1 tbsp |
| Almond cream | 1 tbsp |
Preparation
- Mix all the ingredients (except the almond cream, which will be our topping) in the same bowl and blend.
- It's important to have a large non-stick pan for this recipe. Set the pan on medium heat.
- Add the batter to the pan (for fluffier pancakes, make sure to add a good amount of batter for each pancake) and wait until bubbles start to form on top, and the edges become firmer. Remember to use a pan large enough to easily flip the pancake.
- A tip is to make different-sized pancakes so you can stack them like in the picture.
- Finally, plate the pancakes and add the topping: in this case, a generous spoonful of 100% almond cream and some fresh berries.
